Yields 10 people

To make the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Premix (produces 850ml, to serve 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

For the Cordial: Place all the items into a saucepan, bring to a light boil, agitating to dissolve. After that, remove from the stove and leave to cool fully. Transfer into an sealable bottle, cap it keeping it in the refrigerator, it will last for about one month.

For the Cocktail Base: Pour the specified liquids into a large bottle, allow it to infuse for 60 minutes, then filter it best through cheesecloth, to ensure it's completely strained.

To serve: Measure 85ml of the premix into a cocktail shaker filled with ice, gently stirring lightly for about 60 seconds to cool it down. Strain to a frosted cocktail glass or a similar vessel, decorate with a few cranberries adding the final touch with a light spray of mandarin oil over the top.
